History

Luis Alberto Balladarez Moncada is a hero of the new era; a farmer who has inspired a whole generation of organic growers, he has spent his entire life in a constant effort to improve the reality of his area and his coffees. His key to success in dispensing excellent and consistent cups is extreme care for the processed coffee.

Luis Alberto is obsessed with the quality of his coffee. He picks each berry by hand at the perfect moment of ripeness. He is very careful and scrupulous during the drying process, which must be slow and attentive, so that the bean does not deteriorate or uncontrolled fermentations begin. Every step is carefully attended to, from the harvest to the tasting laboratory.

This coffee variety, called Pacamara, is a cross between two varieties: the Pacas, which produces small bushes, ideal for processing and good harvests, and the Maragogype, which is famous for its elephant beans and incredible sweetness.
